Instructions

  2. Add the chilled butter and mix with your hands or a pastry cutter until the mixture resembles coarse crumbs.
  3. Gradually add cold water, mixing until a smooth dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Cook the Filling:

  1. Heat olive oil in a skillet over medium heat.
  2. Add onions and garlic, sautéing until softened.
  3. Stir in ground beef, breaking it into small pieces. Cook until browned.
  4. Season with paprika, cumin, chili flakes, salt, and pepper.
  5. Add chopped green olives and hard-boiled eggs. Mix well and let cool.

Assemble the Empanadas:

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the dough on a floured surface to about 1/8-inch thickness.
  3. Cut circles using a 4–5 inch round cutter.
  4. Place a tablespoon of filling in the center of each circle.
  5. Fold the dough over to form a half-moon and seal the edges with a fork or by crimping.
  6. Brush the tops with beaten egg.

Bake:
